 Facts on Flax

Flaxseed has been valued for its health benefits for a long time. Hippocrates used flax as a remedy for gastrointestinal problems.
It is one of the best plant based sources of alpha-linolenic acid. which the body converts to heart protective omega-3 fatty acids.
It contains both soluble and insoluble fiber (Total of 3g/Tbsp)

Mild Laxative effect may bother people with inflammatory bowel disease.

Advice:
1-2 Tablespoons of ground flaxseed a day. Start with a smaller amount.
Grind a quarter cup or so at a time, in a coffee grinder or blender dedicated to flax. (You must grind the hard shelled seeds or they will pass through the body undigested.)
Ground Flasmeal should be refrigerated in an airtight container where it will keep for up to 30 days. You'll know that flaxmeal has spoiled if it smells like oil paint.
It has a sweet nutty flavor. Sprinkle over cereals, soups salads, and rice. Bake into cookies, muffins, casseroles, etc.
Flaxseed oil is not recommended because it spoils faster and lacks the protective ligans found in ground seeds.
Sold inexpensively at natural foods stores and many local grocery stores. Always store bag in refrigerator.


Recipe:

Oatmeal Raisin Cookies
Preheat oven to 350 degrees F
Combine in a medium bowl:
  • 1 Cup rolled oats
  • 1/4 Cup whole wheat pastry flour
  • 1/4 Cup soy flour
  • 1/2 Cup sugar
  • 2 tsp. baking powder
  • 1 tsp. ground cinnamon
  • 1/2 tsp. ground nutmeg

Blend in electric blender:
  • 1/4 Cup molasses
  • 3/4 Cup soy milk
  • 1/2 Cup ground flaxseed 
  • 1 Tbsp. Vanilla

Pour liquid mixture into dry ingredients. Add 1/2 Cup raisins and 1/4 Cup nuts. Stir to form cookie batter
Spoon onto nonstick or oiled cookie sheet. Flatten with spatula.
Bake for 30 minutes or until lightly browned

Yield: 8 cookies
Plant estrogen estimate: 1 1/5 portions per cookie
